Gut skins

Guts (sausage skins) are small intestines of sheep and are in the lead of the sausage production with value and consumption. They are used for finest small sausages, as Wiener, Frankfurters etc.. They are tender and nevertheless strongly enough to withstand fill - cook and smoking procedures. Depending upon country of origin the colour varies and ranges from white to grey. This variations says nothing about quality, strength or filling characteristics.
